簡介 Preface

化工暨食品產業可說是啟動臺灣工業的源頭、是推動經濟成長的主力,更是臺灣新科技產業發展的重要推手。化工暨食品學門之創立迄今雖久,目前化工產業相關研究領域也持續發展、更不斷地拓展更新相關技術,未來仍不可限量。另外,食品工程在現今社會的食品工業上扮演者相當重要角色,秉持著維護食品安全與創新、培育食品科技相關人才的研究理念,不斷地提升食品工業製程技術,並開發符合國際標準及具時效且精準之檢驗方法。

 

國內化工與食品科技的提升,除了經濟部主導的產業研發外,最主要的還有各學術研究單位所進行的基礎研究與人材培育,科技部在這方面係扮演非常重要的角色。基於此,化工學門的主要任務即為規劃及推動化工科技的發展,而其目標則是提升化工科技之學術研究水準及培育人材。並期能配合國家經濟建設,以促進產業之升級與永續經營,為人類締造更多的福祉。

 

目前化工暨食品學門所屬的相關院校與科系,總共約有51所學校之60個學系所,教師總人數約一千餘人左右。由於國內環境的特殊,國科會的補助為學術界研究的主要經費來源。近年來,由於研究人口不斷成長,申請計畫之件數亦隨之增多,僧多粥少,使得研究者所能獲得的經費也受到限制。由於資源有限,使得國內化工領域的研究能量仍無法完全發揮。 

 

在經費等資源受限的環境下,化工暨食品學門應整合學門內的研究力量,支援優秀的研究團隊,以提高學術研究水準。學門並應更積極的協助學門內的研究力量,以找尋化工科技應用之最佳契機與方向。配合國內相關產業發展走向與需求,善用化工科技之力量,以達成在最新產業科技中落實生根、及培育新世紀化工科技人材的目的。

 


Chemical engineering and food industry may be regarded as the source of Taiwan's industry; they are not only the main force behind Taiwan's economic growth but also an important force that promotes new technological development in Taiwan. Although chemical engineering and food science have been established as an academic discipline quite some time ago, but the research fields related to chemical engineering and the food industry continue to develop and will lead to unlimited future technologics. Moreover, food engineering is playing an important role in today's food industry. While adhering to the research ideas of innovation and maintaining food safety, we should cultivate the talents related to food science and technology, continually improve the manufacturing process technology in the food industry and develop fast and accurate testing methods that meet international standards.

 

In addition to the industrial R&D led by the Ministry of Economic Affairs, the elevation of Taiwan's chemical engineering and food technology can be mainly attributed to the fundamental research and talent education performed by the various academic research units. In the latter, the Ministry of Science and Technology has played a very important role. On this basis, the main mission of chemical engineering as a discipline is the planning and development of chemical engineering technology, aimed at elevating the standards of academic research in chemical engineering and the cultivation of talents. Hopefully such efforts can be combined with national economic development and contribute to the continued elevation of industry and welfare of mankind.

 

Taiwan currently has 60 academic departments and research institutes in 51 universities in the area of chemical engineering and food science. There are a total of about one thousand instructors in the discipline. Given the particular environment in Taiwan, the subsidy by the Ministry of Science and Technology is the main source of funding. In recent years, the number of researchers continued to grow and the number of project applications has also increased. As a result, the amount of funding received by each researcher has been rather limited. This limitation of resources has prevented a full-fledged development of the chemical engineering field.

 

Given the limited resources, the chemical engineering and food science discipline should consolidate the research strength and support outstanding research teams in order to elevate the academic research standards. The field should also help the researchers in search of new opportunities and directions. The effort should be matched with the development directions and requirements of the pertinent industries, make good use of the chemical engineering technology, and ensure that the new industrial technologies can take root and meet the goal of educating a new generation of talents in chemical engineering.
